COLUMBUS, WI, July 3, 2024 – Butter enthusiasts and culinary aficionados are invited to a seminar titled “The Art of Butter: From Pasture to Palate” at the Columbus Public Library on July 13 at 10 a.m. The event, presented by the Royal Guernsey Creamery, offers a look into the world of artisan butter and its culinary applications.
Sisters Jennifer and Julie Orchard, dairy farmers and creamery co-owners, will share the history and significance of artisan butter, including Wisconsin's unique grading process. They will also explain the role of cream quality in shaping butter's flavor and explore the transformative process of browning butter.
The Magic of Browned Butter
Browned butter, also known as "beurre noisette" in French, is a magical ingredient that elevates the flavor profile of various dishes. The process of browning butter involves heating it until the milk solids separate and begin to brown, creating a rich, nutty, and slightly caramelized flavor.
"Browned butter is a chef’s best-kept secret; its rich, nutty essence and caramel undertones provide a sophisticated flavor boost that elevates every culinary creation," says Jennifer Orchard. "Its complex, toasted flavor brings a new dimension to everything from simple pasta dishes to sophisticated pastries."
Browned butter can be used in baking, cooking, and even as a finishing touch to dishes. It enhances the flavor of cookies, cakes, and pastries, and works wonders in savory dishes like pasta, vegetables and meats. Another popular use is as a base for sauces, adding a unique richness.
Using artisan butter can significantly enhance the browning process as it is made from higher-quality cream that is fresher and less processed. This higher quality starting material means the butter itself has a richer, more nuanced flavor before it even hits the pan. Fresh butter browns more evenly and has a cleaner, more vibrant flavor.
Additionally, artisan butter often has a higher butterfat content which contributes to a smoother, creamier texture and a more luxurious mouthfeel. When browned, the high-fat content allows for a more pronounced and buttery flavor. Artisan butter is also made in small batches, allowing for greater control over the quality of the butter.
