Inspired by our nephew Dane’s favorite candy, these Reese’s Pieces Peanut Butter Bars are a chewy, one-bowl treat that combines creamy peanut butter, oats, and brown sugar with a mix of Reese’s Pieces and chocolate chips. They’re quick to make, require no mixer, and are the perfect way to use leftover Halloween candy—or simply celebrate peanut butter lovers any time of year.
Ingredients
-
6 Tbsp (85 g) Butter, melted
-
⅔ cup (170 g) Peanut Butter
-
½ cup (100 g) Granulated Sugar
-
½ cup (110 g) Light Brown Sugar, packed
-
1 Egg
-
1 Egg Yolk
-
½ tsp Table Salt
-
1 tsp Vanilla Extract
-
1¼ cups (125 g) Old-Fashioned Oats
-
1 cup (120 g) All-Purpose Flour
-
¼ tsp Baking Soda
-
¼ tsp Baking Powder
-
¼ cup (45 g) Chocolate Chips
-
1 cup Reese’s Pieces Candies
Directions
Preheat oven to 350°F (177°C). Lightly spray an 8×8-inch baking pan with nonstick spray, then line it with a parchment paper sling, leaving overhang for easy removal.
In a large mixing bowl, melt the butter. Whisk in peanut butter until smooth.
Add granulated sugar and brown sugar; whisk until combined.
Whisk in the egg, egg yolk, salt, and vanilla extract until the mixture is smooth and glossy.
Switch to a spatula and stir in the oats.
Sprinkle flour, baking soda, and baking powder over the mixture; fold together just until combined.
Fold in chocolate chips and Reese’s Pieces until evenly distributed. The dough will be thick and pebbly.
Spread dough evenly into the prepared pan, pressing gently to remove air pockets. Optional: sprinkle top with flaky sea salt.
Bake 25–30 minutes, rotating halfway through. Begin checking at 20 minutes. Bars are done when the top is light golden brown.
Cool in the pan for 15 minutes, then lift out with the parchment sling. Transfer to a cutting board, slice into squares, and enjoy!
Recipe Note
- Swap Reese’s Pieces for peanut butter chips or mini peanut butter cups.
- For clean slices, let bars cool completely before cutting.
- You can make these in a 9x9" pan, but bake time may be shorter.
